Set oven to 350°F (177°C) to preheat.

In a large ovenproof skillet, heat olive oil over medium heat. Sauté chicken pieces until fully cooked and lightly browned. Remove chicken from the skillet and set aside.

In the same skillet, add sliced onions and bell peppers. Cook, stirring occasionally, until the vegetables are softened to your preference.

Return chicken to the skillet. Add fajita seasoning, sour cream, and softened cream cheese. Stir thoroughly to combine until the mixture is well blended.

Evenly sprinkle the grated cheddar cheese over the chicken and vegetable mixture.

Transfer the skillet to the oven. Bake for 10 to 15 minutes, or until the cheese is fully melted and bubbling.

Remove from oven and allow to cool slightly. Serve hot, garnished with avocado, guacamole, sour cream, or salsa as desired.
