Chicken Fajitas Cheesy Casserole (Print Version)

01 - 1 tablespoon olive oil
02 - 6 boneless skinless chicken thighs or breasts (each 4 to 6 ounces), cut into bite-sized pieces
03 - 4 bell peppers, assorted colors, sliced
04 - 1 small onion, sliced
05 - 1 package fajita seasoning mix (or taco seasoning)
06 - 1 cup sour cream
07 - 4 ounces cream cheese, softened
08 - 2 cups cheddar cheese, grated

09 - Avocado, sliced
10 - Guacamole
11 - Sour cream
12 - Salsa

# Instructions:

01 - Set oven to 350°F (177°C) to preheat.
02 - In a large ovenproof skillet, heat olive oil over medium heat. Sauté chicken pieces until fully cooked and lightly browned. Remove chicken from the skillet and set aside.
03 - In the same skillet, add sliced onions and bell peppers. Cook, stirring occasionally, until the vegetables are softened to your preference.
04 - Return chicken to the skillet. Add fajita seasoning, sour cream, and softened cream cheese. Stir thoroughly to combine until the mixture is well blended.
05 - Evenly sprinkle the grated cheddar cheese over the chicken and vegetable mixture.
06 - Transfer the skillet to the oven. Bake for 10 to 15 minutes, or until the cheese is fully melted and bubbling.
07 - Remove from oven and allow to cool slightly. Serve hot, garnished with avocado, guacamole, sour cream, or salsa as desired.

# Notes:

01 - Pre-cooked chicken may be used to reduce preparation time; substitute with 5 to 6 cups diced cooked chicken.
02 - If lacking an ovenproof skillet, transfer mixture to a greased casserole dish before baking.
03 - Serve over steamed rice, cauliflower rice, or use as filling for warm flour tortillas.
