Heat oil in deep fryer or large pan to 325°F, a few inches deep.

In large bowl, whisk together flour, baking powder, baking soda, salt, pepper and garlic powder.

In another bowl, whisk together buttermilk, egg and hot sauce.

Dredge chicken in flour mixture, then dip in egg mixture, then back in flour. Press flour onto chicken to adhere well.

Fry chicken 3-5 minutes per side until golden brown. Drain on paper towel lined plate.

Heat 1/4 cup reserved oil in large pan over medium-high. Stir in flour and cook 1 minute. Slowly whisk in milk until thickened. Season with salt and pepper.

Pour gravy over individual chicken pieces before serving.
