Chicken Fried Chicken (Printer-Friendly Version)

# What You'll Need:

→ For the Chicken

01 - 6-8 thin sliced chicken breasts
02 - 2 cups flour
03 - 2 tsp baking powder
04 - 1 tsp baking soda
05 - 1 tsp salt
06 - 1 tsp pepper
07 - 1 tsp garlic powder
08 - 1 1/2 cup buttermilk
09 - 1 egg
10 - 1 Tbs hot sauce
11 - Oil for frying

→ For the Gravy

12 - 1/4 cup reserved oil from frying
13 - 1/3 cup flour
14 - 2 cup milk
15 - Salt & pepper

# Let's Cook!:

01 - Heat oil in deep fryer or large pan to 325°F, a few inches deep.
02 - In large bowl, whisk together flour, baking powder, baking soda, salt, pepper and garlic powder.
03 - In another bowl, whisk together buttermilk, egg and hot sauce.
04 - Dredge chicken in flour mixture, then dip in egg mixture, then back in flour. Press flour onto chicken to adhere well.
05 - Fry chicken 3-5 minutes per side until golden brown. Drain on paper towel lined plate.
06 - Heat 1/4 cup reserved oil in large pan over medium-high. Stir in flour and cook 1 minute. Slowly whisk in milk until thickened. Season with salt and pepper.
07 - Pour gravy over individual chicken pieces before serving.

# Cook's Notes:

01 - Can use deep fryer instead of skillet
02 - Can substitute butter or bacon grease for frying oil in gravy
03 - Regular chicken breasts can be sliced in half if thin slices unavailable
04 - Adjust seasonings to taste
