Chicken and Spinach Casserole (Print Version)

01 - 4 boneless, skinless chicken breasts
02 - 4 cups fresh spinach leaves
03 - 227 g (8 ounces) cream cheese, softened
04 - 120 ml (1/2 cup) sour cream
05 - 2 garlic cloves, minced
06 - 170 g (1 1/2 cups) shredded mozzarella cheese
07 - 1 teaspoon salt
08 - 1/2 teaspoon black pepper
09 - 1/2 teaspoon paprika
10 - 1/2 teaspoon onion powder
11 - 1 tablespoon olive oil

# Instructions:

01 - Preheat oven to 190°C (375°F). Lightly grease a 23x33 cm (9x13-inch) baking dish.
02 - Season chicken breasts on both sides with salt, black pepper, paprika, and onion powder. Heat olive oil in a large skillet over medium-high heat and sear the chicken for 2-3 minutes per side until lightly golden. Remove from heat.
03 - In a medium mixing bowl, whisk together the softened cream cheese, sour cream, minced garlic, and a pinch of salt until smooth and well combined.
04 - Arrange fresh spinach evenly in the prepared baking dish. Place the seared chicken breasts on top of the spinach. Spread the cream cheese mixture evenly over the chicken.
05 - Sprinkle shredded mozzarella cheese evenly over the casserole. Bake for 25–30 minutes until the chicken is cooked through and the cheese is bubbling and golden.
06 - Remove from the oven and allow to rest for 5 minutes before serving.
