Set oven to 375°F (190°C) to preheat.

Cut peaches in half and remove pits. Optionally, peel the peaches if preferred.

Place peach halves cut side up in a baking dish.

Combine granulated sugar, brown sugar, and ground cinnamon in a small bowl. Stir until well mixed.

Drizzle melted butter and vanilla extract evenly over the peach halves.

Sprinkle the prepared cinnamon sugar mixture over each peach half.

Drip lemon juice over the peaches and finish with a pinch of salt.

Loosely cover the baking dish with aluminum foil and bake for 25–30 minutes or until peaches are tender and syrupy.

To caramelize tops, remove foil for the final 5 minutes of baking.

Remove from oven and let peaches rest for 10 minutes before serving warm.
