Homemade Cosmic Brownies (Printer-Friendly Version)

# What You'll Need:

→ Brownies

01 - 1 cup (226 g) unsalted butter, (2 sticks)
02 - 2 cups (400 g) granulated sugar
03 - 2 tsp vanilla extract
04 - 4 large eggs
05 - ¾ cup (60 g) unsweetened cocoa powder, (Hershey's Special Dark recommended)
06 - 1 cup (120 g) all-purpose flour, (stir, spoon & level)
07 - ½ tsp baking powder
08 - ½ tsp salt

→ Ganache Icing

09 - 12 oz (340 g) semi-sweet chocolate chips, (use high quality brand) about 2 cups
10 - ¾ cup (177 g) heavy cream
11 - 2 Tbsp candy coated chocolate chips

# Let's Cook!:

01 - Preheat oven to 350 degrees Fahrenheit. Grease a 9x13-inch baking dish. Set aside
02 - In a large microwaveable bowl, melt butter. Stir in sugar and vanilla with a spoon. Add eggs one at a time, mixing well after each addition. Add cocoa; mix completely. Add flour, baking powder, and salt; mix well. Pour batter into prepared baking dish and spread evenly
03 - Bake at 350˚F for 25-35 minutes or until a toothpick inserted into the center comes out almost clean (with only a few moist crumbs) and the edges are pulling away from the sides of the pan. Cool completely
04 - Place chocolate chips in a large heat safe bowl. Warm heavy cream in a saucepan over medium-low heat until simmering. Pour hot cream over chocolate chips and stir vigorously until smooth and blended. Immediately pour ganache over cooled brownies and spread evenly
05 - Place brownies in the fridge for 15-20 minutes or until ganache is almost set. Then sprinkle with candy coated chocolate chips. Return to fridge to set ganache completely. Cut into squares and serve
