01 - 7 large eggs
02 - 1 cup cottage cheese
03 - 1 cup Colby jack cheese, shredded
04 - 3/4 cups bacon bits, cooked
05 - 1/4 teaspoon salt
06 - 1/4 teaspoon black pepper
07 - Cooking oil spray

# Let's Cook!:

01 - Preheat oven to 325°F. Place pan of water on lower rack
02 - Whisk eggs, then mix in bacon, cottage cheese, shredded cheese, salt, and pepper
03 - Spray muffin pan with oil. Distribute mixture evenly. Bake 23-25 minutes until toothpick comes out clean
04 - Cool briefly, remove from pan while still warm
