# Instructions:

01 - In a mixing bowl, blend cottage cheese and eggs until the mixture is smooth.
02 - Add almond flour, grated Parmesan cheese, minced garlic or garlic powder, baking powder, and salt to the wet mixture.
03 - Mix thoroughly until a soft, cohesive dough forms.
04 - Allow the dough to rest for 5 minutes to thicken slightly and improve texture.
05 - Heat a non-stick skillet over medium heat and lightly grease with olive oil.
06 - Scoop a portion of the dough and spread it into a thin, round flatbread directly in the skillet.
07 - Cook for 2 to 3 minutes until the bottom is set and lightly golden brown.
08 - Flip the flatbread and cook for an additional 2 to 3 minutes until golden and cooked through.
09 - Repeat the shaping and cooking process with the remaining dough portions.
10 - Allow the flatbreads to cool slightly on a rack before serving for best texture.

# Notes:

01 - Use thick cottage cheese to achieve optimal dough consistency and texture.
02 - Maintain thin flatbreads for flexibility suitable for wraps or sides.
03 - Cooking over medium heat ensures even cooking and a golden crust.
04 - Store cooked flatbreads refrigerated for up to 4 days or freeze for extended shelf life.
