Preheat oven to 190°C (375°F). Lightly roll out puff pastry sheets to ensure uniform thickness.

Using star-shaped cutters or a sharp knife, cut four graduated star sizes from each pastry sheet: large (9–10 cm), medium (7.5 cm), small (5 cm), and very small (2.5–4 cm). Prepare four sets per tree.

Build each sandwich by layering star, then spread a thin 30 ml layer of cream, followed by a small dollop of jam at the center, topped with another star layer.

Beat egg with water and brush generously over assembled star sandwiches. Sprinkle sesame seeds evenly on top.

Place star sandwiches on a parchment-lined tray and bake for 15–18 minutes until puffed and deep golden brown.

Allow baked pieces to cool slightly, then stack on wooden skewers starting with the largest star at the base and finishing with the smallest on top.
