Creamed Peas Toast (Print Version)

Buttery peas in a creamy sauce, served atop golden toasted bread for a satisfying dish.

# Ingredients:

Vegetables

01 - 2 cups fresh or frozen green peas

Dairy

02 - 4 tablespoons unsalted butter
03 - 2 cups whole milk
04 - 1–2 tablespoons unsalted butter for spreading on toast

Dry Ingredients

05 - 4 tablespoons all-purpose flour
06 - ½ teaspoon kosher salt, or to taste
07 - ¼ teaspoon freshly ground black pepper, or to taste
08 - ¼ teaspoon granulated sugar (optional)
09 - ⅛ teaspoon onion powder or a small pinch of finely minced onion (optional)

Bread

10 - 4 to 8 slices sturdy bread (white, wheat, or homemade)

Herbs

11 - Chopped fresh parsley or a pinch of dried parsley for garnish (optional)

# Instructions:

01 - If using fresh peas, shell and rinse under cold water. For frozen peas, measure out 2 cups without thawing fully. Bring a small amount of water to a boil in a medium saucepan, add peas, and simmer for 3 to 5 minutes until tender and bright green. Drain thoroughly and set aside.
02 - In the same or a clean medium saucepan, melt 4 tablespoons butter over medium heat until foaming. Gradually sprinkle in 4 tablespoons flour while whisking continuously to combine into a smooth paste. Cook for 1 to 2 minutes without browning to remove raw flour taste.
03 - Slowly add the whole milk in increments, whisking constantly to maintain a smooth texture. Initially lumpy, the sauce will become silky as you incorporate all the milk. Season with salt, pepper, optional sugar, and optional onion powder or minced onion. Continue cooking over medium heat, stirring often, until the sauce thickens enough to coat the back of a spoon, about 3 to 5 minutes.
04 - Gently fold the drained peas into the cream sauce. Lower heat to simmer for an additional 2 to 3 minutes to meld flavors. Adjust seasoning to taste.
05 - Meanwhile, toast bread slices until golden and crisp. Lightly butter the hot toast to retain softness beneath the sauce.
06 - Place 1 or 2 slices of toast on each serving plate. Spoon a generous portion of creamed peas over the toast. Garnish with parsley if desired. Serve immediately with a knife and fork, optionally providing extra toast for dipping in the sauce.

# Notes:

01 - For best texture, avoid overcooking the peas; they should retain a bright green color and slight firmness.
02 - If fresh peas are extremely tender, reduce simmering time accordingly.
