Creamy Tomato Garlic Pasta (Print Version)

01 - 12 oz (340g) pasta (fettuccine, penne, or spaghetti)
02 - 2 tablespoons olive oil
03 - 4–5 garlic cloves, minced
04 - 1 (14.5 oz) can diced tomatoes
05 - ½ cup heavy cream
06 - 1 tablespoon tomato paste (optional)
07 - 1 teaspoon sugar (optional)
08 - Salt and freshly ground black pepper, to taste
09 - 1 teaspoon dried oregano
10 - 1 teaspoon dried basil
11 - 1 teaspoon red pepper flakes (optional)
12 - Freshly grated Parmesan cheese, for garnish
13 - Fresh basil or parsley, chopped (optional, for garnish)

# Instructions:

01 - Bring salted water to a boil and cook pasta according to package directions until al dente. Reserve 1 cup pasta water before draining.
02 - Heat olive oil in a large skillet over medium heat. Cook minced garlic for 1-2 minutes until fragrant, being careful not to burn it.
03 - Add diced tomatoes with their juices and tomato paste (if using). Simmer for about 5 minutes to blend flavors and thicken slightly.
04 - Reduce heat to low and stir in heavy cream. Add sugar if using, salt, and pepper to taste.
05 - Stir in dried oregano, basil, and red pepper flakes (if using). Simmer for 5-7 minutes until sauce thickens slightly.
06 - Add cooked pasta to the sauce and toss to coat evenly. Add reserved pasta water if needed to thin the sauce. Simmer together 2-3 minutes.
07 - Garnish with Parmesan cheese and fresh herbs if desired. Serve hot.

01 - For extra flavor and nutrition, add sautéed spinach, zucchini, or mushrooms.
02 - Add grilled chicken, shrimp, or sausage for a protein-packed version.
03 - For more intense tomato flavor, add sun-dried tomatoes to the sauce.
04 - Don't rinse pasta after cooking - the starch helps the sauce stick better.
