# Ingredients:

01 - 2 tablespoons white wine vinegar (or apple cider vinegar)
02 - 1 tablespoon Dijon mustard
03 - 1 tablespoon honey (optional for sweetness)
04 - 1/4 cup mayonnaise (or Greek yogurt for a lighter version)
05 - 1/4 cup extra virgin olive oil
06 - Salt and pepper to taste
07 - 1 small garlic clove, minced (optional)
08 - 1 teaspoon dried oregano (optional)

# Instructions:

01 - In a small bowl, whisk together the vinegar, Dijon mustard, and honey (if using).
02 - Add the mayonnaise (or Greek yogurt) and whisk until smooth.
03 - Slowly drizzle in the olive oil while continuing to whisk to emulsify the dressing.
04 - Stir in the minced garlic and dried oregano, if using, and season with salt and pepper to taste.
05 - Serve immediately or store in an airtight container in the fridge for up to 1 week.
