Crispy Golden Brown Egg Rolls (Print Version)

# Ingredients:

→ Filling

01 - 1 pound ground beef, or substitute with chicken, shrimp, or assorted vegetables, finely chopped
02 - 1 cup finely shredded cabbage
03 - 0.5 cup shredded carrots
04 - 0.25 cup chopped green onions
05 - 2 cloves garlic, minced
06 - 1 tablespoon soy sauce
07 - 1 tablespoon oyster sauce
08 - 1 teaspoon sesame oil
09 - 0.5 teaspoon ground ginger
10 - Salt and freshly ground black pepper, to taste

→ Assembly and frying

11 - 10 to 12 egg roll wrappers
12 - Water, as needed for sealing
13 - Vegetable oil or canola oil, for frying

# Instructions:

01 - Heat a small amount of oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant. Add ground beef (or your chosen protein) and cook, breaking into small pieces, until no longer pink and fully cooked. Drain excess fat.
02 - Stir in the cabbage, carrots, and green onions. Cook for 2 to 3 minutes until vegetables are slightly softened but still crisp. Season with soy sauce, oyster sauce, sesame oil, ground ginger, salt, and pepper. Mix thoroughly and let cool to room temperature.
03 - Place an egg roll wrapper on a flat work surface with one corner pointing toward you. Place 2 to 3 tablespoons of cooled filling in the center. Fold the bottom corner over the filling, then fold in the side corners. Roll up tightly, sealing the final corner with water. Repeat with remaining wrappers and filling.
04 - Heat 5 centimeters (about 2 inches) of vegetable or canola oil in a large pot or deep skillet over medium-high heat. Test the oil by dropping in a small piece of wrapper; it should sizzle immediately. Gently lower rolls into the hot oil in batches, avoiding overcrowding. Fry for 3 to 4 minutes, turning occasionally, until golden and crisp. Remove with a slotted spoon and drain on paper towel-lined plate.
05 - Serve immediately while hot and crispy. Accompany with sweet and sour sauce, soy sauce, or chili dipping sauce as desired.

01 - To bake instead of fry, preheat oven to 200°C (400°F). Arrange rolls on a baking sheet, brush lightly with oil, and bake for 15 to 20 minutes, flipping halfway through until golden and crisp.
02 - Customize the filling by substituting ground meat with tofu or adding mushrooms, water chestnuts, or bamboo shoots for varied texture and flavor.
