01 - 1 pound lean ground beef (90% lean)
02 - 1 packet taco seasoning
03 - 3/4 cup red enchilada sauce
04 - 2 1/2 cups shredded Oaxaca cheese, Mexican blend cheese, or Monterey Jack
05 - 10 corn tortillas
06 - 1 tablespoon olive oil

# Instructions:

01 - Set the oven to 450°F (232°C) to ensure even crisping of the tortillas.
02 - Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned. Stir in the taco seasoning and red enchilada sauce. Reduce heat and simmer briefly until heated through, then remove skillet from heat.
03 - Wrap the corn tortillas in a damp paper towel and microwave for 30–60 seconds until pliable.
04 - Brush one side of each tortilla lightly with olive oil. Place tortillas, oiled side down, on a baking sheet. Add 2 tablespoons of cheese to half of each tortilla, then top with 1/4 cup of the beef mixture. Sprinkle 2 more tablespoons of cheese over the beef. Fold tortillas in half over the filling.
05 - Place the filled tortillas in a single layer on the baking sheet. Bake in the preheated oven for 16 minutes, or until tortillas are crisp and cheese is melted.
06 - Let tacos rest on the baking sheet for 3 minutes before serving to allow the filling to set.
