Set the oven to 450°F (232°C) to ensure even crisping of the tortillas.

Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned. Stir in the taco seasoning and red enchilada sauce. Reduce heat and simmer briefly until heated through, then remove skillet from heat.

Wrap the corn tortillas in a damp paper towel and microwave for 30–60 seconds until pliable.

Brush one side of each tortilla lightly with olive oil. Place tortillas, oiled side down, on a baking sheet. Add 2 tablespoons of cheese to half of each tortilla, then top with 1/4 cup of the beef mixture. Sprinkle 2 more tablespoons of cheese over the beef. Fold tortillas in half over the filling.

Place the filled tortillas in a single layer on the baking sheet. Bake in the preheated oven for 16 minutes, or until tortillas are crisp and cheese is melted.

Let tacos rest on the baking sheet for 3 minutes before serving to allow the filling to set.
