# Instructions:

01 - If using freshly made mashed potatoes, allow them to cool completely in the fridge until firm.
02 - In a large bowl, combine the mashed potatoes, flour, Parmesan cheese (if using), garlic powder, onion powder, smoked paprika, salt, and black pepper.
03 - Mix in the egg and stir until the dough holds together. If the mixture is too sticky, add a little more flour, 1 tablespoon at a time, until a dough-like consistency forms.
04 - Lightly flour a surface and roll out the dough to about ½-inch thickness. Cut into fry-like strips using a knife or pizza cutter.
05 - Heat 2 tablespoons of oil in a large skillet over medium heat. Cook the fries in batches, flipping occasionally, until golden brown and crispy on all sides, about 3-4 minutes per side. Transfer to a paper towel-lined plate to remove excess oil.
06 - Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Place the fries on the baking sheet and brush lightly with oil or melted butter. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
