# Ingredients:

Fritter Mixture

01 - 3 cups grated sweet potato (approximately 450 g)
02 - 1 small onion, finely chopped
03 - 2 cloves garlic, minced
04 - 1 large egg
05 - ¼ cup all-purpose flour (30 g)
06 - ½ teaspoon paprika
07 - ½ teaspoon salt
08 - ¼ teaspoon freshly ground black pepper
09 - 2–3 tablespoons olive oil (30–45 ml) for frying

Whipped Cottage Cheese

10 - 1 cup cottage cheese (200 g)
11 - 2 tablespoons Greek yogurt (30 ml)
12 - 1 tablespoon olive oil (15 ml)
13 - 1 teaspoon lemon juice
14 - Pinch of salt

Hot Honey Drizzle

15 - 3 tablespoons honey (45 ml)
16 - ½ teaspoon chili flakes

Garnish

17 - Fresh chives, chopped
18 - Cracked black pepper

# Instructions:

01 - Combine grated sweet potato, finely chopped onion, minced garlic, egg, flour, paprika, salt, and black pepper in a large bowl. Mix thoroughly until ingredients are uniformly incorporated.
02 - Shape the mixture into small, firm fritters to ensure they hold their form during cooking.
03 - Warm olive oil in a skillet over medium heat until it shimmers.
04 - Fry fritters for 3 to 4 minutes on each side or until deeply golden and crispy. Remove and drain excess oil on a paper towel-lined plate.
05 - Blend cottage cheese, Greek yogurt, olive oil, lemon juice, and a pinch of salt in a food processor or blender until smooth and fluffy.
06 - Gently warm honey and stir in chili flakes, allowing flavors to infuse.
07 - Stack the fritters on a serving plate, top with whipped cottage cheese, drizzle with hot honey, and garnish with fresh chives and cracked black pepper. Serve immediately.

# Notes:

01 - Drain excess moisture from grated sweet potato using a clean kitchen towel for optimal crispiness.
02 - Substitute all-purpose flour with chickpea or gluten-free flour to accommodate dietary restrictions.
03 - For a milder flavor, omit chili flakes and use plain warm honey.
04 - Reheat leftovers using a skillet or air fryer to preserve texture; avoid microwaving.
05 - Consider doubling the hot honey quantity to enhance versatility.
