Heat olive oil in a skillet over medium-high heat. Season beef with kosher salt and freshly ground black pepper. Sear beef on all sides until browned, about 1 to 2 minutes per side.

Place seared beef and pan drippings into the slow cooker. Sprinkle dry onion soup mix evenly over the beef. Pour in water and beef broth.

Cover and cook on HIGH for 4 to 6 hours or LOW for 8 to 10 hours, until beef is tender.

Remove beef from slow cooker and shred using two forks.

Place shredded beef onto sliced rolls and top each with a slice of Swiss or provolone cheese.

Place sandwiches under the broiler until cheese melts and rolls are toasted.

Serve sandwiches with the slow cooker juices (au jus) for dipping.
