Classic Crockpot French Dip (Print Version)

# Ingredients:

→ Meat

01 - 2.5 to 3 pounds beef chuck roast
02 - Kosher salt
03 - Freshly ground black pepper

→ Seasonings and Liquids

04 - 2 (1-ounce) packets dry onion soup mix
05 - 2 cups water
06 - 2 (14.5-ounce) cans beef broth
07 - 2 tablespoons olive oil

→ Bread and Cheese

08 - 6 to 8 crusty rolls (ciabatta or hoagie)
09 - 6 to 8 slices Swiss or provolone cheese

# Instructions:

01 - Heat olive oil in a skillet over medium-high heat. Season beef with kosher salt and freshly ground black pepper. Sear beef on all sides until browned, about 1 to 2 minutes per side.
02 - Place seared beef and pan drippings into the slow cooker. Sprinkle dry onion soup mix evenly over the beef. Pour in water and beef broth.
03 - Cover and cook on HIGH for 4 to 6 hours or LOW for 8 to 10 hours, until beef is tender.
04 - Remove beef from slow cooker and shred using two forks.
05 - Place shredded beef onto sliced rolls and top each with a slice of Swiss or provolone cheese.
06 - Place sandwiches under the broiler until cheese melts and rolls are toasted.
07 - Serve sandwiches with the slow cooker juices (au jus) for dipping.

# Notes:

01 - For richer flavor, substitute beef broth with Better-than-Bouillon. Adjust cooking time according to your slow cooker's performance. Pair with a side salad or coleslaw for a balanced meal.
