Tender chicken baked in a crispy cornflake crust, finished with a sweet and spicy honey glaze.

# Ingredients:

Coating

01 - 6 cups gluten-free cornflakes
02 - 0.25 cup grated Parmesan cheese
03 - 1 teaspoon smoked paprika
04 - 0.5 teaspoon onion powder
05 - 0.5 teaspoon garlic powder
06 - Sea salt, pinch

Chicken

07 - 2 large eggs, beaten
08 - 2 tablespoons hot sauce
09 - 2 pounds chicken breast tenderloins
10 - Extra virgin olive oil, for drizzling

Hot Honey Sauce

11 - 0.5 cup honey
12 - 2 to 3 tablespoons hot sauce
13 - 1 to 3 teaspoons cayenne pepper
14 - 0.75 teaspoon chipotle chili powder
15 - 0.5 teaspoon garlic powder
16 - 0.5 teaspoon onion powder
17 - Sea salt, pinch

Garnish

18 - Fresh thyme, cilantro, or parsley

# Instructions:

01 - Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper.
02 - In a food processor, combine cornflakes, Parmesan, smoked paprika, onion powder, garlic powder, and a pinch of salt. Pulse until fine crumbs form. Alternatively, crush cornflakes in a ziplock bag. Transfer crumbs to a shallow bowl.
03 - Beat eggs with hot sauce in a bowl. Add chicken tenderloins and toss to coat thoroughly.
04 - Dredge coated chicken through the crumb mixture, pressing to fully cover. For extra thickness, dip chicken back into the egg mixture, then coat once more with crumbs. Arrange chicken on the prepared baking sheet and drizzle with olive oil.
05 - Bake the chicken for 20 to 25 minutes until the coating is crisp and golden on all sides.
06 - While chicken bakes, warm honey, hot sauce, cayenne, chipotle chili powder, onion powder, garlic powder, and a pinch of salt in a small saucepan just before the chicken finishes cooking.
07 - Drizzle the warm hot honey sauce over the baked chicken. Garnish with fresh thyme, cilantro, or parsley. If the sauce thickens, rewarm briefly in the microwave before serving.

# Notes:

01 - Use gluten-free cornflakes to keep the dish gluten-free. For a spicier coating, increase the cayenne pepper in the hot honey sauce gradually.
