Doritos Cheesy Chicken Bake (Print Version)

# Ingredients:

01 - 1 bag (10 oz) Doritos Cool Ranch flavored tortilla chips, coarsely crushed (about 6 cups)
02 - 60 ml (1/4 cup) butter, melted
03 - 225 g (2 cups) shredded Colby-Monterey Jack cheese
04 - 425 g (1 jar) four cheese Alfredo pasta sauce
05 - 1 tablespoon Old El Paso Original Taco Seasoning Mix
06 - 450 g (3 cups) shredded cooked chicken
07 - 410 g (1 can) organic fire roasted diced tomatoes, undrained

# Instructions:

01 - Preheat oven to 175°C (350°F). Spray a 33x23 cm (3-quart) baking dish with cooking spray. In a large bowl, toss crushed Doritos with melted butter until evenly coated. Spread 4 cups of the coated Doritos evenly across the bottom of the prepared dish. Sprinkle 120 g (1/2 cup) of shredded cheese over the chip layer.
02 - In a large bowl, mix Alfredo sauce with taco seasoning until homogenous. Add shredded chicken, diced tomatoes with juice, and 120 g (1/2 cup) cheese. Stir gently until thoroughly combined. Spoon this mixture evenly over the Doritos layer in the baking dish.
03 - Bake uncovered for 30 minutes at 175°C (350°F). Remove from oven, sprinkle with remaining crushed Doritos and remaining 225 g (1 cup) cheese. Return to oven and bake for an additional 5 minutes or until the casserole is hot throughout and cheese is fully melted.

01 - Any flavor of Doritos chips can be substituted to vary the dish’s flavor profile.
02 - Rotisserie chicken or pre-shredded deli chicken are convenient options for the shredded chicken component.
