Slice the zucchini into 8-centimetre long, 1.25-centimetre thick fries and set aside.

In a shallow bowl, whisk together flour, Italian seasoning, salt, and black pepper. In a second bowl, lightly whisk the eggs. In a third bowl, combine both types of bread crumbs and grated Parmesan.

Dredge each zucchini fry in the flour mixture, tapping off excess. Dip into the beaten eggs, letting any excess drip away, then roll in the breadcrumb mixture to coat completely. Arrange on a plate.

Spray the inner basket of the air fryer with cooking oil spray. Preheat to 200°C.

Working in small batches, place breaded zucchini fries in a single layer in the air fryer basket. Lightly spray the tops with oil. Air fry for 8–10 minutes, turning once, until golden brown and crisp. While warm, season lightly with additional salt if desired.

While zucchini fries cook, stir minced garlic, lemon or lime juice, and Dijon mustard together in a small bowl. Allow to sit for 10–15 minutes. Whisk in mayonnaise until smooth and season with salt and pepper to taste.

Arrange crispy zucchini fries on a serving dish and offer with prepared garlic aioli for dipping.
