Easy Crispy Air Fryer Zucchini (Print Version)

# Ingredients:

→ Zucchini Fries

01 - 2 medium zucchini
02 - 45 grams all-purpose flour
03 - 1 tablespoon Italian seasoning
04 - 1 teaspoon kosher salt, or to taste
05 - 0.5 teaspoon black pepper, or to taste
06 - 2 large eggs
07 - 60 grams plain bread crumbs
08 - 60 grams panko bread crumbs
09 - 30 grams grated Parmesan cheese
10 - Cooking oil spray, for greasing

→ Garlic Aioli

11 - 4 garlic cloves, minced
12 - 1.5 tablespoons fresh lemon or lime juice
13 - 0.5 teaspoon Dijon mustard
14 - 160 grams mayonnaise
15 - Kosher salt, to taste
16 - Black pepper, to taste

# Instructions:

01 - Slice the zucchini into 8-centimetre long, 1.25-centimetre thick fries and set aside.
02 - In a shallow bowl, whisk together flour, Italian seasoning, salt, and black pepper. In a second bowl, lightly whisk the eggs. In a third bowl, combine both types of bread crumbs and grated Parmesan.
03 - Dredge each zucchini fry in the flour mixture, tapping off excess. Dip into the beaten eggs, letting any excess drip away, then roll in the breadcrumb mixture to coat completely. Arrange on a plate.
04 - Spray the inner basket of the air fryer with cooking oil spray. Preheat to 200°C.
05 - Working in small batches, place breaded zucchini fries in a single layer in the air fryer basket. Lightly spray the tops with oil. Air fry for 8–10 minutes, turning once, until golden brown and crisp. While warm, season lightly with additional salt if desired.
06 - While zucchini fries cook, stir minced garlic, lemon or lime juice, and Dijon mustard together in a small bowl. Allow to sit for 10–15 minutes. Whisk in mayonnaise until smooth and season with salt and pepper to taste.
07 - Arrange crispy zucchini fries on a serving dish and offer with prepared garlic aioli for dipping.

# Notes:

01 - For optimal crispness, thoroughly dry zucchini with paper towels before breading.
02 - Always cook fries in a single layer and work in batches for even browning.
03 - Store any leftovers refrigerated in an airtight container for up to 3 days, reheating in the air fryer at 175°C for several minutes to restore crispness.
04 - To freeze, arrange cooled fries in a single layer on a baking sheet until firm, then transfer to a freezer-safe bag for up to 2 months.
