# Instructions:

01 - Heat oven to 400°F (200°C).
02 - Pat salmon fillets dry with paper towels. Place on a parchment-lined baking sheet or lightly greased baking dish.
03 - Brush each fillet with olive oil or melted butter. Sprinkle with salt, pepper, garlic, oregano, thyme, and smoked paprika if using.
04 - For extra flavor, whisk together Dijon mustard, honey, soy sauce, and lemon zest. Coat salmon with this mixture and let marinate for 10-15 minutes.
05 - Bake for 12-18 minutes depending on thickness (about 10 minutes per inch). Salmon is done when it flakes easily with a fork and reaches 145°F (63°C) internally.
