Coffee Cake (Printer-Friendly Version)

# What You'll Need:

→ For the Cake

01 - 1 egg
02 - 1/4 cup oil (vegetable or canola)
03 - 1 tsp vanilla
04 - 3/4 cup sugar
05 - 1/2 cup milk
06 - 1/4 tsp salt
07 - 2 tsp baking powder
08 - 1 1/2 cups flour

→ For the Streusel

09 - 2 tablespoons butter, melted
10 - 1/2 cup brown sugar
11 - 2 tsp cinnamon
12 - 2 tablespoons flour
13 - 1/2 cup walnuts, chopped (optional)

→ For the Icing

14 - 1 tablespoon butter, room temperature
15 - 3/4 cup powdered sugar
16 - 1 tablespoon milk

# Let's Cook!:

01 - Preheat oven to 375°F. Grease or line 9x9 baking dish with parchment paper.
02 - Beat egg, then mix in sugar, milk, salt, oil, and vanilla. Spoon flour on top, add baking powder, gently combine, then mix into batter.
03 - Melt butter and mix with brown sugar, cinnamon, flour, and optional nuts until well combined.
04 - Pour batter into pan. Sprinkle with streusel and poke 12-18 times halfway into batter.
05 - Bake 25-30 minutes until toothpick comes out with moist crumbs. Don't overbake.
06 - Mix butter and powdered sugar. Thin with milk to desired consistency and drizzle over cake.
