Easy Low Carb Chicken Casserole (Print Version)

# Ingredients:

→ Casserole

01 - 4 cups diced or shredded cooked chicken breast
02 - 8 slices cooked and chopped bacon
03 - 5 cups broccoli florets or 1 pound thawed frozen spinach, well-drained
04 - 3 cloves minced garlic
05 - 1 cup ranch dressing
06 - 1/2 cup shredded mozzarella cheese
07 - 1/2 cup shredded cheddar cheese

→ Topping

08 - 1/2 cup shredded mozzarella cheese
09 - 1/2 cup shredded cheddar cheese

→ Optional

10 - 1 to 3 teaspoons ranch seasoning mix

# Instructions:

01 - If using frozen spinach, thaw fully and squeeze out excess water. For broccoli, boil florets for 1–2 minutes until bright green, then drain.
02 - Preheat oven to 375°F (191°C).
03 - In a large bowl, combine cooked chicken, bacon, prepared vegetables, minced garlic, ranch dressing, 1/2 cup mozzarella cheese, and 1/2 cup cheddar cheese. Mix until uniformly blended. Incorporate optional ranch seasoning if desired.
04 - Move mixture into a 9×13 inch (23×33 cm) casserole dish, spreading evenly.
05 - Sprinkle remaining mozzarella and cheddar cheeses evenly over the top.
06 - Bake for approximately 15 minutes. Remove when top is hot and bubbly. Serve immediately.

# Notes:

01 - To save on dishes, all ingredients can be mixed directly in the casserole dish instead of a bowl.
