# Ingredients:

→ Fries

01 - 450 g frozen extra crispy fast food-style French fries
02 - Vegetable oil, for deep frying

→ Seasoning Mixture

03 - 2 teaspoons fine salt
04 - 2 tablespoons paprika
05 - 1 teaspoon garlic powder
06 - 2 teaspoons chili powder
07 - 1 teaspoon onion powder
08 - 0.25 teaspoon cayenne pepper, optional

→ Cheese Sauce

09 - 16 slices processed American cheese
10 - 60 ml whole milk
11 - 1 tablespoon pickled jalapeño brine

# Instructions:

01 - In a small bowl, combine salt, paprika, garlic powder, chili powder, onion powder, and cayenne pepper. Mix thoroughly.
02 - Pour enough vegetable oil into a deep saucepan to submerge fries by at least 7.5 cm. Heat the oil to 180°C.
03 - Carefully add frozen fries to the hot oil and cook for 6 to 8 minutes, or until golden and crisp. Remove using a slotted spoon and place on a plate lined with paper towels.
04 - Unwrap and tear the slices of American cheese into small pieces. Combine cheese, milk, and jalapeño brine in a microwave-safe bowl. Microwave, uncovered, in 30-second intervals, stirring between each, until smooth and fully melted.
05 - Place the warm fries in a large bowl and toss evenly with the prepared seasoning mixture.
06 - Arrange seasoned fries on a serving platter and present with warm cheese sauce on the side for dipping.
