In a small bowl, mix melted unsalted butter with minced garlic, dried parsley, salt, and black pepper until well combined. Set aside.

Preheat oven to 190°C (375°F). Lay flour tortillas flat on a clean work surface.

Brush each tortilla with a generous layer of garlic butter. Evenly scatter crumbled bacon over each tortilla, then top with cheddar cheese, mozzarella cheese, and chives if using.

Roll up each tortilla tightly from one end to create spirals. Place seam-side down on a parchment-lined baking sheet.

Brush tops of rollups with remaining garlic butter. Bake in preheated oven for 12–15 minutes, until tortillas are golden and cheese is melted and bubbling.

Allow rollups to cool briefly. Slice each rollup into bite-sized pieces and arrange on a serving platter. Serve warm.
