# Ingredients:

→ Main Ingredients

01 - 4 oz dried wheat noodles (Taiwanese sliced noodles, frozen udon, or instant ramen)
02 - 3 cloves garlic, minced
03 - ½ tbsp red chili flakes (e.g. Sichuan chili flakes or Gochugaru)
04 - 1 green onion, finely chopped
05 - ½ tsp Chinese black vinegar (or substitute with rice vinegar or apple cider vinegar)
06 - 1 tsp dark soy sauce
07 - ½ tsp regular soy sauce
08 - ½ tsp chicken bouillon powder
09 - ¼ tsp white granulated sugar
10 - 1 tsp sesame seeds
11 - 3 tbsp vegetable oil (or any neutral tasting oil)

# Instructions:

01 - In a medium pot filled with water, bring to a boil over medium-high heat. Cook noodles until al dente for 2-3 minutes or as per package instructions. Strain noodles and transfer them to a large bowl (ceramic, glass, or metal).
02 - Add regular soy sauce, dark soy sauce, Chinese black vinegar, minced garlic, chicken bouillon powder, granulated sugar, finely chopped green onions, red chili flakes, and sesame seeds to the center of the noodles.
03 - In a small saucepan, heat vegetable oil over medium-high heat. Once it begins to smoke, remove from heat and immediately pour the hot oil over the green onions, minced garlic, and chili flakes to lightly cook them.
04 - Thoroughly mix the noodles with chopsticks or kitchen tweezers until everything is evenly combined. Serve immediately and garnish with additional green onions and sesame seeds, if desired.

# Notes:

01 - For additional flavor, consider adding a dash of toasted sesame oil just before serving.
