Cheesy Garlic Chicken Meatloaf (Print Version)

# Ingredients:

→ For the Meatloaf

01 - 1 ½ pounds ground chicken
02 - ½ cup grated Parmesan cheese
03 - 3 garlic cloves, minced
04 - ½ cup breadcrumbs, plain or Italian-seasoned
05 - 1 large egg, lightly beaten
06 - 1 tablespoon Italian seasoning
07 - ½ teaspoon salt
08 - ½ teaspoon black pepper
09 - ½ cup shredded mozzarella cheese (optional, for a cheesy center)
10 - 2 tablespoons chopped parsley, for garnish

→ For the Topping

11 - ¼ cup grated Parmesan cheese
12 - 2 tablespoons melted butter
13 - 1 teaspoon minced garlic

# Instructions:

01 - Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper
02 - In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined but do not overmix
03 - Transfer half of the chicken mixture to the prepared loaf pan and press it evenly into the bottom. If using mozzarella for a cheesy center, layer it over the meat mixture, leaving a small border around the edges. Top with the remaining chicken mixture and press gently to seal
04 - In a small bowl, mix the grated Parmesan, melted butter, and minced garlic. Spread this mixture evenly over the top of the meatloaf
05 - Place the meatloaf in the preheated oven and bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C)
06 - Remove the meatloaf from the oven and let it rest for 5–10 minutes before slicing. Garnish with chopped parsley for a fresh touch

# Notes:

01 - Use a meat thermometer to ensure the meatloaf reaches 165°F
02 - For extra moisture, you can add ¼ cup of marinara sauce to the mixture
03 - Resting allows the meatloaf to firm up for easier slicing
