Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper

In a large mixing bowl, combine the ground chicken, Parmesan cheese, minced garlic, breadcrumbs, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined but do not overmix

Transfer half of the chicken mixture to the prepared loaf pan and press it evenly into the bottom. If using mozzarella for a cheesy center, layer it over the meat mixture, leaving a small border around the edges. Top with the remaining chicken mixture and press gently to seal

In a small bowl, mix the grated Parmesan, melted butter, and minced garlic. Spread this mixture evenly over the top of the meatloaf

Place the meatloaf in the preheated oven and bake for 40–45 minutes, or until the internal temperature reaches 165°F (74°C)

Remove the meatloaf from the oven and let it rest for 5–10 minutes before slicing. Garnish with chopped parsley for a fresh touch
