Garlic Shrimp Pasta Butter (Print Version)

# Ingredients:

→ Seafood

01 - 1 pound medium shrimp, deveined and tails removed

→ Pasta

02 - 1 pound spaghetti, uncooked

→ Aromatics

03 - 6 to 8 garlic cloves, finely minced

→ Fats

04 - 4 tablespoons unsalted butter
05 - 3 tablespoons olive oil, divided

→ Seasonings

06 - Italian seasoning, to taste
07 - Freshly ground black pepper, to taste
08 - Red pepper flakes, to taste
09 - Fine sea salt, to taste

→ Herbs

10 - Fresh herbs, optional, chopped, to taste

# Instructions:

01 - Bring a large pot of salted water to a boil. Stir in a light drizzle of olive oil and add optional fresh herbs. Cook spaghetti until al dente, about 9 to 11 minutes. Reserve 1 cup pasta water. Drain and set aside.
02 - While pasta cooks, rinse and pat dry the shrimp.
03 - Melt butter in a large skillet over medium heat. Add shrimp and cook until just turning pink and curling, 2 to 3 minutes.
04 - Add minced garlic to the skillet with shrimp. Sauté for 5 to 7 minutes until shrimp become fully pink and opaque.
05 - Add remaining olive oil to the skillet. Incorporate drained pasta, Italian seasoning, black pepper, red pepper flakes, and salt. Pour in 1/4 cup reserved pasta water to moisten, adding more as needed.
06 - Toss everything together over medium heat until pasta is evenly coated and hot. Garnish with additional fresh herbs if desired and serve immediately.

01 - For extra richness, drizzle with extra-virgin olive oil and sprinkle freshly grated parmesan before serving.
