Easy Greek Baked Cod (Print Version)

# Ingredients:

→ For the Cod

01 - 4 cod fillets (about 6 ounces each)
02 - 3 tablespoons extra virgin olive oil
03 - 2 tablespoons fresh lemon juice
04 - 1 teaspoon lemon zest
05 - 2 cloves garlic, minced
06 - 1 teaspoon dried oregano (Greek oregano preferred)
07 - 1/2 teaspoon salt
08 - 1/2 teaspoon black pepper

→ Optional Garnishes

09 - 1/4 cup crumbled feta cheese
10 - 2 tablespoons fresh parsley, chopped
11 - Extra lemon wedges for serving

# Instructions:

01 - Heat your oven to 400°F. Lightly oil a baking dish to prevent sticking.
02 - Mix olive oil, lemon juice, zest, garlic, oregano, salt and pepper in a small bowl.
03 - Place cod in the dish and pour marinade over, coating each piece well. Let sit for 15-20 minutes if you have time.
04 - Cook in the oven for 12-15 minutes until fish flakes easily with a fork.
05 - Top with feta if using, sprinkle with parsley, and serve with lemon wedges.

01 - If cod isn't available, try haddock, halibut, or tilapia instead.
02 - Skip the feta for a dairy-free version.
03 - Add cherry tomatoes or olives for extra Mediterranean flavor.
