# Ingredients:

Potatoes and Toppings

01 - 4 large russet potatoes
02 - 2 tablespoons olive oil
03 - 2 teaspoons kosher salt
04 - ¾ cup sour cream
05 - 1 cup shredded pepper jack cheese
06 - ¼ cup finely chopped fresh chives
07 - ½ teaspoon kosher salt (for filling)
08 - ¼ teaspoon ground black pepper

Steak

09 - 1 lb filet mignon medallions, cut into 1-inch cubes
10 - 1 tablespoon olive oil (for steak)
11 - 1 teaspoon kosher salt (for steak)
12 - ½ teaspoon ground black pepper (for steak)
13 - 1 teaspoon steak seasoning (optional)

Garlic Herb Butter

14 - 4 tablespoons unsalted butter
15 - 2 garlic cloves, minced
16 - 1 tablespoon fresh parsley, chopped
17 - ½ teaspoon fresh rosemary, chopped
18 - ½ teaspoon fresh thyme leaves
19 - Pinch of kosher salt (for butter)

# Instructions:

01 - Preheat grill to medium-high heat (400-425°F). Scrub potatoes, pierce with a fork, then rub evenly with olive oil and kosher salt. Wrap each potato individually in foil and place on the grill. Cook for 45 to 60 minutes until tender when pierced.
02 - Melt unsalted butter over medium heat in a small pan, add minced garlic and cook for 30 seconds until fragrant. Remove from heat and stir in chopped parsley, rosemary, thyme, and a pinch of kosher salt. Set aside.
03 - In a bowl, toss filet mignon cubes with olive oil, kosher salt, black pepper, and optional steak seasoning. Heat a cast iron skillet on the grill over high heat and sear steak cubes for 2 to 3 minutes per side until medium-rare. Drizzle with 1 tablespoon of garlic herb butter once cooked.
04 - Cut each grilled potato lengthwise about three-quarters through. Gently squeeze the ends to open slightly. In a separate bowl, mix sour cream, shredded pepper jack cheese, chopped chives, ½ teaspoon kosher salt, and ¼ teaspoon black pepper until combined.
05 - Fill each potato opening with the sour cream and cheese mixture, top generously with seared steak bites, and drizzle remaining garlic herb butter over. Garnish with additional fresh chives and serve immediately while hot.

# Notes:

01 - Wrapping the potatoes in foil ensures even cooking and prevents drying out on the grill.
