# Ingredients:

Main Ingredients

01 - 6 burrito-size flour tortillas
02 - 2 pounds ground beef
03 - 1 small onion, finely diced
04 - 1 small bell pepper, finely diced
05 - 3 tablespoons chopped parsley
06 - 1½ cups shredded mozzarella cheese, divided
07 - 2 teaspoons salt
08 - 1 teaspoon garlic powder
09 - 1 teaspoon onion powder
10 - ¼ teaspoon paprika
11 - 1 tablespoon olive oil, for brushing

Sauce

12 - 3 tablespoons ketchup
13 - 6 tablespoons mayonnaise
14 - ½ teaspoon garlic powder
15 - Salt, to taste

# Instructions:

01 - Preheat oven to 215°C (420°F). Lightly brush or spray a 7x11 inch baking dish with olive oil.
02 - In a large bowl, thoroughly mix ground beef, diced onion, diced bell pepper, chopped parsley, 1 cup of shredded mozzarella, salt, garlic powder, onion powder, and paprika.
03 - Evenly distribute the meat mixture over each tortilla. Use your fingers to spread the filling thinly and evenly reaching close to the edges. Roll each tortilla tightly and then slice into 6.5 cm (2½ inch) rolls.
04 - Place the rolls cut side up in the prepared baking dish. Lightly brush the tops with olive oil. Bake for 25 to 30 minutes until cooked through.
05 - Remove rolls from the oven, sprinkle with remaining mozzarella cheese, and return to oven until cheese melts. Optionally, broil for 2 to 3 minutes, watching carefully to avoid burning.
06 - In a small bowl, whisk together ketchup, mayonnaise, garlic powder, and salt until smooth. Serve alongside the tortilla rolls.

# Notes:

01 - Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Use any ground meat of choice or omit cheese for variation.
