Sweet & Spicy Pork Belly (Print Version)

# Ingredients:

01 - 3 pounds pork belly
02 - ¾ cup hoisin sauce
03 - 2 tbsp vegetable oil, for frying
04 - 1 chili pepper, chopped
05 - 6 garlic cloves, minced
06 - 1 tsp grated ginger

→ For the Sauce

07 - 1 tbsp low sodium soy sauce
08 - 1 tbsp rice vinegar
09 - 2 tsp sesame oil
10 - 3 tbsp water

→ For Serving

11 - 3 tbsp cilantro, chopped
12 - Steamed rice

# Instructions:

01 - Preheat the oven to 400°F (200°C)
02 - Cut pork belly into long strips, then slice into 1-inch (2.5 cm) pieces. Line baking sheet with parchment paper
03 - Toss pork belly with ½ cup hoisin sauce, ensuring each piece is coated
04 - Spread pork belly in single layer and roast for 30 minutes until crispy and caramelized. Use two baking sheets if needed to prevent overcrowding
05 - While pork roasts, cook rice according to package directions. Prepare garlic, ginger, chili pepper, and cilantro
06 - Combine remaining hoisin sauce with soy sauce, sesame oil, water and rice vinegar
07 - Heat oil in skillet or wok over medium-high heat. Add garlic and cook for 30 seconds, stirring constantly. Add chili pepper
08 - Add roasted pork belly to skillet. Pour in prepared sauce and simmer for 1 minute
09 - Stir in chopped cilantro. Serve over steamed rice

01 - Use two baking sheets if needed to ensure pork crisps evenly
02 - Adjust chili pepper amount based on desired spice level
03 - Can be made ahead and reheated, though pork will be less crispy
