Sweet and savory roasted potatoes (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 pounds (900g) baby red or Yukon gold potatoes, halved or quartered
02 - 6 strips halal beef bacon, chopped into bite-sized pieces
03 - 2 tablespoons olive oil
04 - 2 tablespoons honey (raw or regular)
05 - 1 tablespoon Dijon mustard (optional for added tang)
06 - 1 teaspoon garlic powder
07 - 1 teaspoon onion powder
08 - 1 teaspoon smoked paprika
09 - Salt, to taste
10 - Freshly ground black pepper, to taste
11 - 1 tablespoon fresh parsley, chopped (for garnish)
12 - 1 teaspoon red pepper flakes (optional for a mild kick)

# Instructions:

01 - Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil for easier cleanup and even roasting.
02 - Wash the potatoes thoroughly. Halve or quarter them so they are all roughly the same size for even cooking.
03 - In a large mixing bowl, combine the potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper. Toss until each piece is well coated.
04 - Spread the potatoes in a single layer on the baking sheet. Avoid overcrowding the pan, which could cause steaming rather than roasting.
05 - Scatter the chopped halal beef bacon evenly across the potatoes. The rendered fat from the bacon will flavor and crisp the potatoes during roasting.
06 - Roast in the preheated oven for 30–35 minutes. Halfway through cooking, toss the potatoes to ensure even browning and bacon crispiness.
07 - While the potatoes are roasting, prepare the glaze by whisking together the honey and Dijon mustard (if using) in a small bowl.
08 - Remove the baking sheet from the oven with 5–7 minutes of cooking time remaining. Drizzle the honey glaze over the potatoes and bacon, and gently toss to coat. Return to the oven for the final roasting phase.
09 - Once the potatoes are golden brown and crispy, remove them from the oven. Garnish with chopped parsley and red pepper flakes if desired.
10 - Serve warm as a side dish, appetizer, or brunch feature. Enjoy the harmony of sweet, savory, and smoky flavors in every bite.

# Notes:

01 - This recipe uses halal beef bacon, making it suitable for those who avoid pork
02 - For crispier potatoes, you can parboil them for 5 minutes before roasting
03 - Leftovers can be reheated in the oven at 350°F for 10-15 minutes to regain crispiness
