Honey Roasted Sweet Potatoes (Print Version)

# Ingredients:

01 - 2 pounds sweet potatoes, peeled and chopped into bite-sized pieces
02 - 1 tablespoon extra virgin olive oil
03 - 2 tablespoons unsalted butter, melted
04 - 1 lemon, zest and juice
05 - 1/4 cup honey
06 - Salt, to taste

# Instructions:

01 - Preheat the oven to 425° Fahrenheit. Line a half sheet baking pan (13x18 inch) with aluminum foil and set aside.
02 - Peel the sweet potatoes and cut them into bite-sized pieces. Place them in a large mixing bowl and season with salt.
03 - Combine melted butter and olive oil in a small saucepan. Heat over medium until the butter is fully melted. Add lemon juice, lemon zest, and honey. Simmer over low heat for 1 minute.
04 - Pour the honey-lemon butter mixture over the sweet potatoes. Toss thoroughly to ensure even coating.
05 - Spread the coated sweet potatoes evenly on the prepared baking pan. Roast for 25 minutes, checking for desired caramelization. If additional browning is needed, roast for 3–5 minutes longer.
