Preheat the oven to 425° Fahrenheit. Line a half sheet baking pan (13x18 inch) with aluminum foil and set aside.

Peel the sweet potatoes and cut them into bite-sized pieces. Place them in a large mixing bowl and season with salt.

Combine melted butter and olive oil in a small saucepan. Heat over medium until the butter is fully melted. Add lemon juice, lemon zest, and honey. Simmer over low heat for 1 minute.

Pour the honey-lemon butter mixture over the sweet potatoes. Toss thoroughly to ensure even coating.

Spread the coated sweet potatoes evenly on the prepared baking pan. Roast for 25 minutes, checking for desired caramelization. If additional browning is needed, roast for 3–5 minutes longer.
