Irish Gur Cake Squares (Print Version)

# Ingredients:

01 - 8 slices white bread, crusts removed
02 - 300 g old cake or muffins
03 - 1 cup cold black tea (250 ml)
04 - 2 shortcrust pastry sheets or homemade pastry
05 - 4 tbsp self-raising flour
06 - 1.5 cups sultanas (150 g)
07 - 1/3 cup golden syrup (90 g)
08 - 1.5 tbsp mixed spice or substitute with 2 tsp cinnamon, ½ tsp cloves, ½ tsp nutmeg, ½ tsp ginger
09 - Icing sugar or powdered sugar (optional, for garnish)

# Instructions:

01 - Remove the bread crusts and break into pieces in a large mixing bowl. Add the cold black tea and mash the bread with a fork until a stiff, pulpy consistency forms.
02 - Add self-raising flour, sultanas, golden syrup, and mixed spice to the bread mixture. Stir well and let the mixture sit for 30 minutes.
03 - Preheat the oven to 200°C (400°F). Line a square baking tin with one sheet of shortcrust pastry, cut to fit.
04 - Spread the fruit mixture evenly over the first pastry layer. Cover with the second pastry sheet, cut to fit, and prick holes in the top with a fork.
05 - Bake the assembled cake in the preheated oven for 45 minutes.
06 - Let the cake cool completely before cutting into squares. Serve as is or garnish with icing sugar for an extra touch.

# Notes:

01 - Can be served warm with custard and ice cream for dessert.
02 - Store in an airtight container at room temperature or refrigerated for up to 3-4 days.
03 - Can double the recipe and use a larger baking dish as requested by many families.
