Miso Risotto with Soy Salmon (Print Version)

# Ingredients:

→ Japanese-Style Risotto

01 - 3 tbsp olive oil, divided
02 - 10.5 ounces shiitake mushrooms, torn into pieces
03 - 1 tbsp low sodium soy sauce
04 - 1 small yellow onion, diced
05 - 1 celery stalk, diced
06 - 1 garlic clove, minced
07 - 1 cup rice (sushi rice or Arborio)
08 - ¼ cup dry white wine or sake
09 - 5 cups hot chicken broth
10 - 1 tbsp white miso paste
11 - Black pepper, for serving
12 - Chives, for serving
13 - Sesame seeds, for serving

→ Seared Salmon

14 - 5 tbsp low sodium soy sauce
15 - 1 tbsp dry white wine
16 - 1 tsp brown sugar
17 - 4 skinless salmon fillets
18 - 1 tbsp olive oil
19 - 1 tbsp unsalted butter

# Instructions:

01 - In a shallow dish, combine soy sauce, white wine and brown sugar. Add salmon fillets, coat both sides. Set aside to marinate
02 - Tear shiitake mushrooms into small pieces. Finely dice celery, mince garlic and finely chop onion
03 - Heat 1 tablespoon oil over high heat in heavy-bottomed pot. Add shiitakes and cook until they release moisture. Add another tablespoon oil and cook until browned. Stir in soy sauce and cook 1 minute more. Remove from pot
04 - Reduce heat to medium-low and add 1 tablespoon oil. Add celery, onion and garlic. Cook for 2 minutes until fragrant
05 - Add rice and toast for 1 minute. Deglaze with white wine, simmer for 2 minutes while scraping up brown bits from bottom of pot
06 - Add 2 ladles chicken broth at a time, stirring frequently, until broth is almost completely absorbed before adding more. Cook until rice is almost al dente, about 15 minutes
07 - Stir in shiitakes. Dissolve miso paste with 2 tablespoons hot broth and add to risotto. Simmer about 5 minutes until ready, adding more broth if needed
08 - Heat oil and butter over medium-high heat in nonstick skillet. Add salmon and sear 4 minutes per side
09 - Serve salmon over risotto, top with black pepper, chives and sesame seeds

# Notes:

01 - You may not need all the broth depending on rice type
02 - Sushi rice makes this more authentically Japanese
03 - Can substitute shiitakes with other mushrooms if needed
