Bang Bang Chicken Kick (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 0.25 teaspoon black pepper, ground
02 - 0.5 teaspoon smoked paprika
03 - 1 teaspoon garlic powder
04 - 2 tablespoons olive oil
05 - 1 tablespoon rice vinegar
06 - 2 tablespoons honey
07 - 2 tablespoons sriracha sauce
08 - 3 tablespoons soy sauce
09 - 680 g chicken thighs or chicken breast, cut small

→ Bang Bang Sauce

10 - 0.5 teaspoon lime juice
11 - 1 tablespoon honey (just if you want a touch of sweet)
12 - 1 tablespoon sriracha sauce
13 - 2 tablespoons sweet chili sauce
14 - 120 ml mayonnaise

→ Garnish

15 - Lime wedges
16 - Fresh parsley or cilantro, finely chopped

# Instructions:

01 - Move the cooked chicken skewers onto your plate, sprinkle them with your favorite chopped herbs, pour over the rest of the bang bang sauce, and finish up with lime wedges on the side.
02 - Lay out the skewers on the hot grill. Grill for about 10-12 minutes, flip them here and there so all sides get that nice char. Right before taking them off, brush them well with some bang bang sauce.
03 - Set your grill or grill pan on medium to high, get it nice and hot. Wipe or spray a little oil on the grill so things won't stick.
04 - Dump your mayo into a bowl, then stir in sweet chili sauce, sriracha, lime juice and honey (if you like it sweeter). Mix it all up till it’s smooth. Save this till serving.
05 - If you’re using wooden skewers, soak them in water so they don’t burn. Thread the marinated chicken onto them—don’t pack them too tight, let the pieces have a little room to cook evenly.
06 - Toss soy sauce, sriracha, honey, vinegar, olive oil, garlic powder, smoked paprika, and pepper in a big bowl. Add your chicken pieces and make sure everything gets coated everywhere. Pop it in the fridge (covered) for at least 30 minutes, up to 4 hours if you can.

# Notes:

01 - Let that chicken soak in the marinade for the whole 4 hours if you have plenty of time. It's worth it for flavor.
