01 -
Preheat oven to 375°F. Cook noodles in a large pot of salted water according to package directions for al dente. Drain and immediately transfer noodles to a pot filled with cold water to stop cooking and prevent sticking.
02 -
In a deep pan or Dutch oven over medium-high heat, cook ground beef until no longer pink, breaking it apart with a spatula, about 2 minutes. Add diced onion and cook until softened, approximately 3 minutes. Stir in minced garlic, sea salt, black pepper, and dried oregano; sauté for an additional minute. Pour in marinara sauce, bring to a simmer, then remove from heat. Reserve 1/2 cup for later and spread the remainder on the bottom of a casserole dish.
03 -
In a large bowl, combine ricotta cheese, egg, shredded Parmesan, 1 1/2 cups of shredded mozzarella, and chopped parsley until smooth and well blended.
04 -
Arrange noodles in a single layer on a large baking sheet to keep manageable. Spread approximately 1/4 cup of the cheese mixture evenly over each noodle. Place a heaping tablespoon of meat sauce in a strip down the center and carefully roll up each noodle. Arrange the roll-ups seam-side down in the prepared casserole dish.
05 -
Spread reserved meat sauce evenly over the roll-ups and sprinkle with the remaining 1 1/2 cups mozzarella cheese. Cover with foil, making sure it does not touch the cheese (use toothpicks if necessary). Bake at 375°F for 40 minutes. Remove foil and broil for 2 to 3 minutes until cheese is lightly golden.
06 -
Remove from oven and sprinkle with additional chopped parsley before serving.
