# Ingredients:

01 - 1 large bunch kale (curly or lacinato), stems removed and chopped
02 - 1/2 cup freshly grated Parmesan cheese

→ For the Lemon Dressing

03 - Juice of 1 lemon (about 3 tbsp)
04 - 2 tbsp extra virgin olive oil
05 - 1 tsp honey
06 - 1 small clove garlic, minced
07 - Salt and pepper, to taste

# Instructions:

01 - Wash kale thoroughly and remove tough stems. Chop into bite-sized pieces. Drizzle a little olive oil over the kale and massage it with your hands for 1-2 minutes until softened.
02 - In a small bowl, whisk together lemon juice, olive oil, honey, and minced garlic. Season with salt and pepper to taste. Adjust acidity or sweetness if needed.
03 - Pour the dressing over the massaged kale and toss to coat evenly. Sprinkle Parmesan cheese over the salad and toss again.
04 - Serve immediately or let it sit for a few minutes to allow the flavors to meld. Optional: Top with toasted nuts or seeds for extra crunch.
