# Ingredients:

01 - 16 ounces (453 g) breakfast sausage

→ Batter

02 - 2 cups Hungry Jack pancake mix
03 - 1 1/2 cups water
04 - 1/4 cup maple syrup, plus more for serving
05 - 1 cup shredded cheddar cheese

# Instructions:

01 - Preheat oven to 400°F (204°C). Generously grease a mini muffin tin with butter or nonstick spray; set aside to cool slightly.
02 - In a 12-inch skillet over medium-high heat, break up and brown breakfast sausage until no pink remains. Transfer cooked sausage to a plate lined with paper towels using a slotted spoon.
03 - In a large mixing bowl, combine pancake mix, water, and maple syrup. Gently stir until just incorporated; avoid overmixing.
04 - Fold shredded cheddar cheese and browned sausage into the batter until evenly distributed.
05 - Spoon the batter evenly into the prepared mini muffin tin. Bake in the preheated oven for 12–15 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
06 - Remove from oven and serve warm with additional maple syrup for dipping if desired.
