Easy Mexican Pizza Recipe (Printer-Friendly Version)

# What You'll Need:

→ Tortillas

01 - 1/4 cup vegetable oil
02 - 16 corn tortillas (6-inch)

→ Mexican Pizzas

03 - 2 cups refried beans, warmed (16 ounce can)
04 - 1 teaspoon vegetable oil
05 - 1 pound ground beef
06 - 1 tablespoon taco seasoning
07 - 2 cups enchilada sauce (or taco sauce)
08 - 8 ounces cheddar cheese, shredded
09 - Salt to taste

→ Toppings

10 - Diced tomato
11 - Sliced black olives
12 - Green onion
13 - Hot sauce

# Let's Cook!:

01 - Heat oil to medium. Fry tortillas 2-3 minutes per side until golden and crisp. Drain on paper towels, season with salt
02 - Preheat oven to 350°F (175°C)
03 - Heat 1 teaspoon oil over medium heat. Cook ground beef 6-7 minutes until done. Add taco seasoning and 1/4 cup water. Simmer 10 minutes
04 - Place 8 tortillas on baking sheet. Layer each with sauce, beans, and meat. Top with remaining tortillas, more sauce, and cheese
05 - Bake 10 minutes until cheese is melted
06 - Top with diced tomato, olives, green onion, and hot sauce as desired

# Cook's Notes:

01 - Can air fry tortillas 6-8 minutes instead of frying
02 - Use taco sauce instead of enchilada sauce if preferred
