# Ingredients:

Meat Mixture

01 - 1.5 pounds ground beef
02 - 1 cup crushed tortilla chips or plain breadcrumbs
03 - 2 large eggs
04 - 0.5 cup milk
05 - 1 small onion, finely diced
06 - 2 cloves garlic, minced
07 - 1 packet (about 1 oz) taco seasoning
08 - 0.5 cup chunky salsa
09 - 0.5 cup shredded cheddar or Mexican blend cheese
10 - 0.25 cup chopped fresh cilantro (optional)
11 - 0.5 teaspoon salt
12 - 0.25 teaspoon black pepper

Topping

13 - 0.33 cup salsa
14 - 0.5 cup shredded cheese

# Instructions:

01 - Preheat the oven to 375°F (190°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.
02 - In a large mixing bowl, combine ground beef, crushed tortilla chips, eggs, milk, diced onion, garlic, taco seasoning, salsa, cheese, cilantro, salt, and pepper.
03 - Use clean hands or a spoon to mix gently until just combined. Avoid overmixing to ensure tenderness.
04 - Shape the mixture into a loaf and place it in the prepared pan or on the baking sheet.
05 - Spread ⅓ cup salsa evenly over the top of the meatloaf.
06 - Bake for 40 to 45 minutes, or until the internal temperature reaches 160°F (71°C).
07 - Remove from oven, sprinkle remaining shredded cheese over the top, and return to oven for 5 minutes until melted.
08 - Let the loaf rest for 8 to 10 minutes to set before slicing to maintain shape.

# Notes:

01 - Resting allows juices to redistribute, preventing crumbling when sliced.
