One Pot Taco Spaghetti (Print Version)

A cheesy, flavorful one pot dinner with ground beef, taco seasoning, Rotel, and a trio of melting cheeses.

# Ingredients:

Meat and Vegetables

01 - 1 lb ground beef (alternatively turkey, chicken, or sausage)
02 - 1 medium yellow onion, diced
03 - 1 medium green bell pepper, diced

Seasonings and Sauces

04 - 2 packets (2 oz) taco seasoning
05 - 2 cans (10 oz each) Rotel tomatoes and green chilies

Pasta and Broth

06 - 1 lb spaghetti, broken in half if necessary
07 - 5 cups beef broth

Cheese and Dairy

08 - 4 oz Velveeta cheese
09 - 4 oz sharp cheddar cheese, grated
10 - 4 oz pepper jack cheese, grated
11 - 120 ml milk

Optional Toppings

12 - Sour cream, jalapeƱos, tomatoes, cilantro, green onions, hot sauce, crushed Doritos or preferred garnishes

# Instructions:

01 - Heat a large pot over medium heat. Add ground beef, diced onion, and green bell pepper. Cook until beef is browned and vegetables are softened, breaking up meat as it cooks. Drain excess grease if necessary.
02 - Stir in taco seasoning until the mixture is evenly coated. Add Rotel tomatoes and green chilies, mixing thoroughly.
03 - Add broken spaghetti noodles and pour in beef broth. Stir gently to ensure noodles are mostly covered by liquid.
04 - Cover pot with lid and reduce heat to a simmer. Cook for 12 to 15 minutes, stirring occasionally to prevent noodles from sticking.
05 - Lower heat to low. Add Velveeta, sharp cheddar, pepper jack cheeses, and milk. Stir continuously until cheeses melt and sauce becomes creamy and smooth. Adjust consistency with additional milk or water if needed.
06 - Taste and adjust seasoning with salt and pepper as desired. Serve immediately with preferred toppings.

# Notes:

01 - If the sauce appears too thick after adding cheese, gradually add milk or water to loosen it to the desired consistency.
