Out-of-this-World Corn Dip (Print Version)

# Ingredients:

01 - 3 cans (11 oz each) MexiCorn, drained
02 - 1 can (7 oz) chopped green chiles, drained
03 - 1 can (6 oz) chopped jalapeno peppers, drained, liquid reserved to taste
04 - 1/2 cup chopped green onions
05 - 1 cup mayonnaise
06 - 1 cup sour cream
07 - 1 teaspoon ground black pepper
08 - 1/2 teaspoon garlic powder
09 - 1 package (16 oz) shredded sharp cheddar cheese

→ For Serving

10 - 2 to 3 bags Fritos Scoops corn chips

# Instructions:

01 - In a large mixing bowl, thoroughly combine MexiCorn, chopped green chiles, chopped jalapeno peppers (add reserved liquid to desired heat level), green onions, mayonnaise, sour cream, black pepper, garlic powder, and shredded sharp cheddar cheese.
02 - Cover and refrigerate the mixture for at least 2 hours, or overnight, to allow flavors to meld.
03 - Transfer chilled corn dip to a shallow serving dish and present with Fritos Scoops corn chips.

# Notes:

01 - For a milder dip, reduce the amount of jalapeno or omit reserved liquid. This dip can be prepared in advance and improves in flavor when chilled overnight.
