# Ingredients:

01 - 1 medium head cauliflower, cut into bite-sized florets
02 - 1 cup grated Parmesan cheese
03 - 1 cup breadcrumbs (panko preferred for extra crispiness)
04 - 2 large eggs
05 - 1 teaspoon garlic powder
06 - 1 teaspoon onion powder
07 - ½ teaspoon smoked paprika
08 - ½ teaspoon salt
09 - ¼ teaspoon black pepper
10 - Olive oil spray (or additional olive oil for tossing)
11 - Fresh parsley, chopped (for garnish)

# Instructions:

01 - Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.
02 - In a large mixing bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
03 - In a separate bowl, beat the eggs until frothy.
04 - Dip each cauliflower floret into the egg mixture, making sure to coat it well, then roll it in the Parmesan breadcrumb mixture, pressing lightly to ensure it adheres.
05 - Arrange the coated cauliflower bites in a single layer on the prepared baking sheet. Lightly spray the tops with olive oil spray for extra crispiness (if not using oil, you can drizzle a bit of olive oil over them).
06 - Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the bites are golden brown and crispy.
07 - Once baked, remove from the oven and let them cool for a few minutes. Garnish with fresh chopped parsley before serving.
