Peach Cherry Fresh Salsa (Print Version)

A fresh mix of peaches, cherries, jalapeño and citrus for a bright, fruity complement.

# Ingredients:

Fruits

01 - 2 peaches, diced into 1/2-inch pieces
02 - 1 cup cherries, halved and pitted
03 - 1 1/2 limes, juiced plus zest from 1 lime

Vegetables and Herbs

04 - 1 jalapeño pepper, seeded and finely chopped
05 - 1/2 small red onion, finely diced
06 - 1 large handful fresh cilantro, finely chopped
07 - 2 garlic cloves, minced

Seasoning

08 - Salt, to taste (preferably sea salt)

# Instructions:

01 - Mince the garlic cloves and set aside. Dice the peaches into 1/2-inch pieces and place in a large mixing bowl. Halve and pit the cherries, adding them to the bowl. Finely chop the cilantro and set aside. Remove seeds from the jalapeño and chop finely. Finely dice the red onion. Juice the limes and zest one lime, keeping both separate to maintain brightness.
02 - Add minced garlic, chopped cilantro, jalapeño, and diced red onion to the bowl with peaches and cherries. Pour in the lime juice and sprinkle the lime zest over the mixture. Season with salt to taste, starting with a pinch and adjusting as needed. Gently fold all ingredients together with a spoon or spatula, taking care not to crush the fruit pieces, allowing the juices to create a fresh base.
03 - Transfer the mixture to the refrigerator for at least 15 minutes to meld flavors and chill. Before serving, stir gently to redistribute juices and adjust seasoning if necessary.

# Notes:

01 - Preparing all ingredients before mixing prevents the fruit from breaking down prematurely and ensures better texture control.
