# Ingredients:

Cake

01 - 2 1/2 cups all-purpose flour
02 - 2 teaspoons baking powder
03 - 1/2 teaspoon baking soda
04 - 1/2 teaspoon salt
05 - 1 cup unsalted butter, softened
06 - 1 3/4 cups granulated sugar
07 - 4 large eggs
08 - 1 teaspoon vanilla extract
09 - 1 teaspoon coconut extract
10 - 1 cup crushed pineapple, undrained
11 - 1 cup buttermilk
12 - 1 1/2 cups sweetened shredded coconut

Cream Cheese Frosting

13 - 16 ounces cream cheese, softened
14 - 1 cup unsalted butter, softened
15 - 5 cups powdered sugar
16 - 2 teaspoons vanilla extract

Garnish

17 - 1 cup toasted coconut flakes
18 - Pineapple chunks
19 - Maraschino cherries (optional)
20 - Chopped pecans (optional)

# Instructions:

01 - Preheat oven to 350°F (175°C). Grease and flour three 8-inch round cake pans. Line bottoms with parchment paper. Set aside.
02 - Whisk together flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
03 - Beat unsalted butter until smooth. Gradually add granulated sugar and continue beating for 4 to 5 minutes until light and fluffy. Add eggs one at a time, mixing well after each. Incorporate vanilla and coconut extracts.
04 - Mix in crushed pineapple with juice. Alternately add flour mixture and buttermilk, starting and ending with the flour mixture. Stir until just combined. Fold in shredded coconut.
05 - Divide batter evenly among prepared pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
06 - Beat cream cheese and unsalted butter until smooth and fluffy. Gradually add powdered sugar and mix in vanilla extract. Beat until creamy.
07 - Place one cake layer on serving plate and spread frosting evenly. Repeat with remaining layers, then frost top and sides. Press toasted coconut flakes onto sides. Garnish with pineapple chunks and maraschino cherries as desired.

# Notes:

01 - Use crushed pineapple with juice to ensure maximum moisture. Avoid overmixing the batter to maintain cake texture. Ingredients should be at room temperature. Cool cakes completely before applying frosting. Toast coconut flakes carefully to prevent burning. Refrigerate after assembly due to cream cheese frosting.
