Pumpkin Spice No-Bake Cookies (Print Version)

Chewy pumpkin spice no-bake cookies made with oats, vanilla pudding, warm spice, and white chocolate chips.

# Ingredients:

For the cookies

01 - 3 1/2 cups (315 g) quick oats
02 - 1 package (3.4 oz or 96 g) instant vanilla pudding mix
03 - 1 1/2 teaspoons pumpkin pie spice
04 - 1/4 teaspoon fine sea salt
05 - 1/2 cup (113 g) unsalted butter
06 - 1 cup (200 g) granulated sugar
07 - 1/3 cup (70 g) packed light brown sugar
08 - 1/2 cup (120 ml) evaporated milk
09 - 1 teaspoon vanilla extract
10 - 1 cup (170 g) white chocolate chips

# Instructions:

01 - Line two baking sheets with parchment paper or wax paper and set them near the stove.
02 - In a large heatproof bowl, stir together the quick oats, instant vanilla pudding mix, pumpkin pie spice, and salt until evenly mixed.
03 - In a medium saucepan, combine the butter, granulated sugar, brown sugar, and evaporated milk. Bring to a full rolling boil over medium heat, stirring often.
04 - Once the mixture keeps bubbling while stirred, boil for 90 seconds. Stir constantly so the sugar does not scorch.
05 - Remove the saucepan from the heat and stir in the vanilla. Pour the hot syrup over the oat mixture and fold until the oats are evenly coated.
06 - Let the mixture cool for 2 minutes, then gently stir in the white chocolate chips. Stop as soon as they are distributed.
07 - Drop rounded tablespoons of the mixture onto the prepared pans. Let stand at room temperature for about 1 hour, or refrigerate for 25 minutes, until firm.

# Notes:

01 - Makes about 28 small cookies.
02 - Best texture comes from quick oats, not steel-cut oats.
03 - Let the mixture rest briefly before adding chips so they do not fully melt.
