Baked Cod with Mayo Parmesan (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 cod fillets (about 6 oz each)
02 - 1/2 cup mayonnaise (or Greek yogurt for lighter version)
03 - 1/4 cup grated Parmesan cheese
04 - 1 tablespoon Dijon mustard (optional)
05 - 1 teaspoon garlic powder
06 - 1 teaspoon lemon juice
07 - Salt and pepper, to taste

→ For Garnish

08 - Fresh parsley (optional)
09 - Lemon wedges (optional)

# Instructions:

01 - Preheat oven to 400°F (200°C). Lightly grease a baking dish or line with parchment paper
02 - Combine mayonnaise, Parmesan cheese, Dijon mustard (if using), garlic powder, lemon juice, salt and pepper in a small bowl
03 - Pat cod fillets dry with paper towels. Season both sides with salt and pepper, place in prepared baking dish
04 - Spread mayo-Parmesan mixture evenly over the top of each cod fillet
05 - Bake in preheated oven for 15-20 minutes, until fish flakes easily and topping is golden brown
06 - Remove from oven, garnish with fresh parsley or lemon wedges if desired. Serve immediately

# Notes:

01 - Can substitute cod with tilapia, haddock, or pollock
02 - Use Greek yogurt instead of mayo for a lighter version
03 - For crispier topping, broil for last 2-3 minutes
