01 -
Preheat the oven to 425°F. Place the potatoes in a large pot and cover with water by 1 inch. Add a handful of kosher salt. Bring to a boil, then reduce heat to simmer and cook for 15 minutes until fork-tender. Drain and transfer potatoes to a rimmed baking sheet; let cool slightly.
02 -
Combine butter, garlic cloves, and olive oil in a baking dish. Bake for 20 to 30 minutes until garlic is golden and butter is browning, monitoring closely to prevent burning.
03 -
Mash the roasted garlic into the butter using a fork. Stir in chopped oregano, parsley, basil, cayenne pepper, and season with salt and black pepper.
04 -
Using the bottom of a flat cup, gently smash each potato on the baking sheet. Drizzle with olive oil and bake for 20 minutes. Remove from oven, spoon herb butter over each potato, then return to bake for an additional 10 to 15 minutes until extra crispy.
05 -
Serve warm, garnished with additional fresh herbs and a sprinkle of sea salt as desired.
