In a bowl, toss sliced bananas with 1/4 cup brown sugar, vanilla extract, and salt. Spread mixture evenly in the prepared baking dish.

In a separate bowl, whisk together flour, remaining 1/4 cup brown sugar, granulated sugar, baking powder, and cinnamon. Cut in cold cubed butter until the mixture becomes crumbly. Stir in milk until just combined.

Dollop the biscuit topping over the banana mixture, allowing some banana to remain visible as the topping will spread during baking.

Bake for 30 to 35 minutes until the topping is golden brown and the filling is bubbly. Remove from oven and let cool for 5 minutes.
